Roasted stuffed peppers

These roasted peppers stuffed with quinoa and vegan sausage will satisfy even your hungriest guests!

For 4 large roasted peppers

Instructions

  1. Prepare the quinoa following the instructions on the package, add the vegetable broth cube in the water.
  2. Preheat oven to 375 °
  3. Cut the peppers under the stem and remove the seeds inside.
  4. Heat the oil in a non-stick pan.
  5. Brown the onions for about 2 minutes.
  6. Add the sausages and cook for another 2 minutes.
  7. Mix all the ingredients with the cooked quinoa and fill the peppers.
  8. Place the peppers on a parchment paper lined baking sheet and bake at 375 ° for 25 minutes (place the slices with the stem on top of the peppers).
