Super grain Thai salad

For 2-3 servings

Recipe Expo Manger Santé

Ingredients

  • 1 box of super grain spaghettini
  • 1 cup of cooked quinoa (sprouted tri-color)
  • 1/2 cup of sprouted lentils (you can cook them with the quinoa)
  • 2 cups finely chopped Napa cabbage
  • 1 1/2 cup of grated carrots
  • 1 red pepper cut into thin slices
  • 1 cup of edemame
  • 3-4 scallions
  • 1 cup of finely chopped cilantro

Thai sauce

  • ¼ cup almond butter (peanuts, tahini, sunflower seeds)
  • 2 tbsp. of rice vinegar
  • 2 tbsp. of lime juice
  • 3 tbsp. of vegetable oil (or 1 tablespoon sesame oil + 2 tablespoons vegetable oil)
  • 1 tbsp of tamari
  • 2 tbsp. of maple syrup
  • 2 garlic cloves
  • 3 cm of grated fresh ginger
  • 1 tsp. of salt
  • ¼ tsp. of chili flakes

Instructions

1. Cook the pasta following the directions on the package, then rinse with cold water
2. Mix all the ingredients of the salad together
3. In a high speed blender, mix all the ingredients of the sauce 
4. Mix sauce and veggies together and serve.
