Soupe minestrone 2.0

3-4 Servings

Ingredients

  • 1 pouch of GoGo Quinoa’s minestrone (+ 5 cups of water, as indicated on the packaging)
  • 1 celery stalk
  • 1/2 cup of cut green beans
  • 1/3 cup of grated carrots
  • 1 1/2 cup of fresh baby spinach
  • 1/2 cup white beans (rinsed and drained)
  • 2 tbsp of fresh parsley chopped
  • 1/2 cup of chopped zucchini
  • 2 fresh tomatoes or 1 medium can of chopped tomatoes
  • 1 onion
  • Water if needed

Instructions

  1. Heat some oil in a soup pot, sauté the onion, celery, green beans.
  2. Add the minestrone mix, the water, and the rest of the ingredients bring to a boil, then reduce the heat and allow to simmer for 15-20 minutes. Do not hesitate to add more water if you think your soup is too thick.
  3. Finally, add the fresh spinach add cook for an additional 3 minutes
