Spaghetti Pesto & Quinoa

A classic and delicious spaghetti dish with quinoa

Ingredients

1 pack of 227grs GoGo Quinoa spaghetti
2 cups cooked red quinoa
1,5 cups of tomato coulis
1 cup of your favorite Pesto
½ cup of red bell pepper, cut in thin strips
2 teaspoons fresh lemon juice
¼ cup Parmesan (or vegan parmesan)
olive oil

Instructions

  1. Bring a large pot of well salted water to a boil, and cook the quinoa pasta according to package directions, being careful not to overcook.
  2. While the pasta is cooking, heat the olive oil in a pan and sauté the red bell peppers for about 15 minutes until they are soft.
  3. Heat the tomato coulis, remove from heat and add the pesto. Reserve.
  4. Drain pasta and transfer to a serving bowl. Toss in pesto and tomato coulis. Add red quinoa, sun dried tomatoes and lemon juice and toss again. If desired top with Parmesan cheese.
