Spaghetti Pesto & Quinoa
A classic and delicious spaghetti dish with quinoa
1 pack of 227grs GoGo Quinoa spaghetti
2 cups cooked red quinoa
1,5 cups of tomato coulis
1 cup of your favorite Pesto
½ cup of red bell pepper, cut in thin strips
2 teaspoons fresh lemon juice
¼ cup Parmesan (or vegan parmesan)
- Bring a large pot of well salted water to a boil, and cook the quinoa pasta according to package directions, being careful not to overcook.
- While the pasta is cooking, heat the olive oil in a pan and sauté the red bell peppers for about 15 minutes until they are soft.
- Heat the tomato coulis, remove from heat and add the pesto. Reserve.
- Drain pasta and transfer to a serving bowl. Toss in pesto and tomato coulis. Add red quinoa, sun dried tomatoes and lemon juice and toss again. If desired top with Parmesan cheese.
