Sun-dried tomato and mushroom spiced pasta

Ingredients

• 2  packs GoGo Quinoa Fusilli Pasta (227gr)

• 6 large sun-dried tomatoes

• 2 1/2 cups cremini mushrooms

• 3 garlic cloves, chopped

• 1/2 cup organic vegetable broth

• 3 tbsp balsamic vinegar

• 1 tbsp coconut oil

• 2 tbsp extra virgin olive oil

• 1/2 cup chopped parsley

• 2 tbsp lemon juice

• 2 cups spinach

• 1 tsp dried rosemary

• 1 tsp dried marjoram

• 1 tsp dried thyme

• 1 tsp curry spice

• 1-2 tsp black pepper

• pinch of pink Mountain salt

Instructions

Cooking the Pasta

1.  Fill 3/4 of water in a medium pot. Add a pinch of salt. Bring water to boil.

2. Add the Fusilli pasta into the boiled water.

3. Stir the pasta for 2 minutes and cover the pot and let cook for 7 minutes.

4. Strain the pasta.

5. Add the coconut oil and black pepper into the pasta pot and mix.

The Filling

1. In a medium-sized pan over high-medium heat, place the garlic and mushrooms together with the vegetable broth and lemon juice. Let simmer for about 4 minutes.

2. In a separate bowl, pour hot water into a bowl with the sun-dried tomatoes. Let sit for two minutes.

3. Add the following spices; rosemary, marjoram, thyme, and curry into the pan. Add balsamic vinegar.

4. Strain the sun-dried tomatoes and cut into halves. Stir into the pan.

5. Let all ingredients to simmer in the pan and stir for 1 minute.* If dry, add more vegetable broth or water.

6. Add parsley and spinach into the pan and lightly stir around.

7. Pour all the ingredients from the pan into the pot of pasta and gently stir around. Drizzle extra virgin olive oil and continue to stir gently.

Garnish

1. Once all ingredients have been combined, you may begin to serve. Garnish with fresh parsley and even add some tomato purée! It will add a hint of flavor, but don’t overdo it with the tomato purée, as the pasta and the filling are already filled with rich flavors.
