Sunny Rotini Protein Pasta Salad

For 2 -3 people

Recipe by The Vegan Bee 

 

Ingredients

– 1 bag of 227grs of GoGo Quinoa Rotini
– 2-3 cups of fresh baby spinach
– 2 cups of cherry tomatoes, cut in half
– ½ cup of sun-dried tomatoes, cut into thin slices
– 3-4 large fresh basil leaves, finely chopped
– ½ cup black olives cut in half 
– 2-4 tsp. vegan Parmesan cheese (nutritional yeast and cashew powder) or regular Parmesan

Sauce :

– 4 tbsp. extra virgin olive oil 
– 2 ½ tsp. of  balsamic vinegar
– 1 tsp. of dried basil 
– 1 tsp. of dried oregano 
– 1 garlic clove, finely chopped
– Salt and pepper to taste

Instructions

1. Cook the pasta according to package directions and rinse with cold water
2. In a large bowl, combine all the sauce ingredients. Add the salad ingredients. Mix well and serve.
