VEGETABLE AND QUINOA SOUP 2.0

Let’s give a Mexican twist to our Vegetable and Quinoa soup!

3-4 Servings

Ingredients

  • 1 pouch of GoGo Quinoa’s Quinoa and vegetable (+5 cups of water)
  • 1 onion 
  • 1 celery stalk, chopped
  • 2 carrots, chopped 
  • 4 garlic cloves 
  • 1 medium can of diced tomatoes 
  • 1 big cup of black beans 
  • 1/2 cup of fresh cilantro 
  • Water if needed 
  • Optional: lime wedges, diced avocado, crumbled tortilla, cheese, sour cream, cilantro, cooked chicken…

Instructions

  1. In a big pot, drizzle some oil and cook the onion, celery stalk, and garlic cloves until golden 
  2. Add the GoGo Quinoa quinoa and vegetable pouch, the water, the can of tomatoes, the carrots and cook for 10 minutes. 
  3. Add the black beans and cook for an additional 5 minutes 
  4. Sprinkle the fresh cilantro and serve with your favourite toppings
