Warm Quinoa & Cauliflower Salad

Ingredients

1/2 cauliflower roughly sliced
1/2 cup  red&white GoGo Quinoa
4 garlic cloves crushed
1 teaspoon ground curcuma
2-3 tablespoon coconut oil (or sunflower oil)
3-4 cups of baby spinach leaves
some cherry tomatoes and  cilantro for decoration
Pink salt to taste

Instructions

  1. Stir-fry the cauliflower with curcuma and garlic in coconut oil over high heat, stirring regularly until well roasted (you may need to add a little more oil in the process).
  2. Meanwhile cook the quinoa as directed. When quinoa is ready, mix it with cauliflower, season with salt to taste and let cool 5 to 10 minutes.
  3. Add 3-4 cups of baby spinach and stir well to combine. Serve and dress with chopped cilantro and some cherry tomatoes on the side.
