Zucchini banana and chocolate muffin

For 12 Muffins

Ingredients

  •  1 cup of sorghum flakes
  •  1 ½ cup of GoGoquinoa pancake mix
  •  1 cup of sugar
  •  ½ tsp of salt
  •  1 ½ tbls chia seeds in 5 tbls of water (or 1 big egg)
  •  ¾ cup of vegetable oil
  •  1/2 cup of milk of your choice
  •  1 tbls of apple cider vinegar (or white vinegar)
  •  1 ½ cups of grated zucchinis (one big zucchini)
  •  2/3 cup of dark chocolate chips
  •  2 mashed bananas

Instructions

  1. Preheat your oven to 350F
  2. Mix all the dry ingredients together
  3. In a separate bowl, combine oil, milk, chia egg, vinegar
  4. Incorporate the liquid mixture into the dry mix
  5. Add crushed bananas, grated zucchini and chocolate
  6. Bake 15 minutes – plant a knife in it, if it comes out clean, your muffin is cooked
